I started my GF career out of need from my brother. He runs an awesome cafe called Blue Planet Natural Grill in Omaha, Nebraska. You see, his gluten free baker suddenly closed shop seemingly overnight and he has a very real need to serve his celiac customers.
I don't really know how this business (if it truly becomes a business) might turn out. I just happen to have the facility and, so it would seem, the talent to bake.
My first objective was to learn as much as I could about the GF world and why it is. I found sad, sad stories about celiacs ranging from mildly intolerant to the extreme. As well as many who choose to live life GF for personal and healthy eating reasons.
I then started playing with the existing recipes for GF baked goods, as that is what Danno needed for Blue Planet. I found that many of them were, frankly, disgusting and vile. What a poor eating life these people have to put up with, I thought. Food is a passion of mine and I could not make and sell this stuff. So I started using the baking knowledge I have and started fiddling with the recipes. I came up with a really good pizza crust, and voila! Bird's GF Bakery was born. At this point I only sell a couple dozen crusts and hamburger buns to BP, but, as my recipe file grows, so will my business.
I hope to be, eventually, of service to celiacs in the metro Omaha area soon. You never know, maybe the country...we all have to dream big, don't we?
